Ultra Low Carb Goodness
Oh a party, a great reason to create something quick, easy, tasty, and beautiful! Just recently, we had a very special friend to surprise for a birthday celebration (who just happens to LOVE BACON), so we brainstormed and came up with this mini BLT ultra low carb concoction.
This is a deliciously tasty ultra low carb way to satisfy any bacon-lovers appetite and it only takes a few minutes of prep. We even made an extra batch to feed our young kids and they adored them; thought they were bacon candy. If you have kids, this may be a keeper for parties and get togethers, for they are quit attractive. Here is how to do it.
Ingredients:
- Cherry tomatoes
- Bacon
- Greens (we used our garden greens, but even just regular lettuce would work just fine)
- toothpicks
Directions:
Cook bacon so that it is pliable enough to stick a toothpick through.
Chop tomatoes in half and greens should be 2-4 inches.
Once bacon is cooked and cooled chop in one inch pieces (we used scissors for bacon and greens).
Then poke toothpick through half of tomato, then layer greens and bacon, and then top with the other tomato half.
Serve with homemade mayo on the side (we added garlic and hot sauce to ours for dipping pleasure!)
