SLOW COOKER Rotisserie Chicken!

 

 

ONLY 3 INGREDIENTS NEEDED for this rotisserie style chicken!

 

We love rotisserie chicken but never realized we could make it in our slow cooker!! From now on, this will be how we do our chickens!!! It was by far the easiest method and the best part is that it was super juicy and tasty!

For a variety of different flavors, you could also slather the chicken with whatever flavors you love on your rotisserie chicken (honey barbecue, lemon pepper, hot sauce,  rosemary, butter & garlic, etc…).

Ingredients:

Brine the chicken overnight in the fridge (3/4cup salt : one gallon water). Brine for at least 12 hrs.

Wad up aluminum foil balls and place at the bottom of slow cooker. This is to allow the chicken’s fat and juices to fall to the bottom (and not let the chicken swim in a pool of soupy slop).

After taking the chicken out of the brine, rinse, coat with Italian seasoning, and place on top of foil balls.

Cover and cook on high 4 hrs or low 6-8. When finished, removed the chicken, save the juices as chicken stock, and throw away the aluminium foil balls. Pretty easy clean up. We normally save the chicken stock and freeze it in one cup increments for later use.

After the chicken was done, this time we decided to drain the left over juices at the bottom of the crock pot into a small sauce pan and steamed white rice in it! It was fabulous.

We love to stock up on whole chickens and keep them in our freezer. Now that we know we can do them rotisserie style in our slow cooker, we will be enjoying them more often!
