Real Doughy Crust, Healthy Paleo Pizza and Breadsticks

Grain free, gluten free chewy pizza crust!

YUM!  Fool your guests with this awesome, tasty pizza. Recently I had made this for a young 20-year-old pizza lover, who told me (no joke) it was the best pizza he as ever eaten.  So, I decided to do a pizza and breadstick series, with two versions: ultra-low carb (using cauliflower crust) and regular paleo (using yucca crust).  Makes One Pizza

Crust Ingredients:

 Pizza Sauce:

Mix all ingredients together. Keep adding vinegar until your desired thickness is reached.

 

Crust & Breadstick Directions:

Preheat oven to 350 degrees (we use toaster oven for convenience).

Grate yucca in food processor or using a grater

Add eggs, cheese, sour cream, and seasonings; process again ( or mix)

Line a pizza pan with parchment paper and smash mix onto it (will be a bit watery and that is okay)

Bake for 30-40 min depending on your oven, until the top is brown.

Take out and flip, (sprinkle more cheese on the top if doing cheesy breadsticks) put back in oven until the other side is brown.

 

Breadsticks: Take out and slice into strips and ENJOY. I recommend dipping in the pizza sauce or  homemade ketchup!

 

 

Pizza: decorate it and put back into oven and broil it until cheese is melted!(Here we made extras. We cooked two pizzas and froze two!)

 

 

 

 

 

 

Take out of the oven, slice it, and serve!

 

*we always make a bunch when we do this recipe and freeze them (you can freeze just the crust or as a whole pizza)! It freezes excellently and makes for easy frozen pizza!!!

  • 1 giant stick of yucca (peeled and chopped into chunks)
  • 4 eggs
  • 1 cup cheese
  • ½ cup of sour cream
  • Italian seasoning
  • Salt and pepper

Pizza Sauce:

  • 8 oz tomato paste (one small packet)
  • 4-5 drops of stevia
  • vinegar (1/2 cup – 1 cup or more)
  • 1-2 tbsp of chopped garlic
  • dash of cinnamon & salt
