Grain free, sugar-free cookies with no preservatives or additives, just wholesome goodness!
My boys get excited anytime they get to eat food in various shapes and forms. I am often making monster faces and smiley face arrangements with their food. Thus, when I found a cookie cutter in the shape of a little man, I had to buy it. It has been a huge hit to say the least. Since we loved the butter cookie men I made previously, (and we love ginger snaps) I wanted to spice that recipe up with a few e
xtra ingredients, namely ginger, and try it again. Well, thankfully they turned out to be a super delicious, sugar-free cookie!
Ingredients:
- 2 Eggs
- 4 tablespoon Salted Butter – softened
- 2 cups Almond Flour
- 1/2 teaspoon Vanilla Extract
- 4 full droppers Liquid Stevia or 3-4 packets powdered Stevia, more or less to taste
- 1/2 teaspoon Salt
- 2 tablespoon Ground Ginger
- 3 teaspoons Cinnamon
- 1/2 teaspoon Ground Cloves
- 1 teaspoon Ground Nutmeg
Instructions
In a medium mixing bowl, whisk egg and butter. Then add everything else to bowl and mix well.
Preheat oven to 350 degrees. Freeze dough for 10-15 minutes. It should be firm.
When firm, place dough a baking sheet lined with parchment paper. Gently place another sheet of parchment paper on top of dough. Use a rolling pin to flatten out the dough a little.
Remove top piece of parchment paper and cut out your shapes.
Bake for 15-20 minutes. Let cool (will harden as they cool).
