Grain free, gluten free, sugar free, egg free…
I really wanted to see if this recipe would work with substituted ingredients. Well, surprise, IT DID! What is more, it turned out way better than I expected and was quite simple to create.
Ingredients:
- 1 stick butter (room temp)
- 1 cup of flour (we used almond flour but coconut flour would also work. Just be sure to pack it down or you may need to add a little extra if the dough is overly wet.
- ½ cup of sugar substitute (we used coconut sugar but you could use honey, stevia, xylitol, whatever substitute you like best).
- 1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees. Meanwhile, put everything in a bowl and combine. (Your dough should be sticky but not overly wet. If it is too wet, add a little bit more flour).
Divide dough into two halves. Put each half onto a baking tray covered with parchment paper. Flatten the dough to your preferred cookie thickness and cut into squares. (We made cookie men out of one half of the dough because, well, because my son found it in the drawer at the last minute.) We also sprinkled with cinnamon because both of my boys love cinnamon!
Bake for 8-12 minutes until golden brown. (We use the toaster oven for convenience!)
You may not think it is done when you check on it because the dough will still feel soft to touch. However, trust me, once cooled they will harden!
