Kid Approved Green Smoothie (Using Green Plantain Resistant Starch and Sissoo Spinach)

 

Green Smoothie

With our abundance of Sissoo spinach proliferating everywhere, I decided to incorporate it in a few of our everyday recipes, starting with the easy smoothie.  Having two young boys, smoothies are always a hit. They get so excited when I blend up concoctions for them and today was no different….except for one thing…..they ate resistant starch goodness!

 

Let me explain, if you have been following my blog, you know that we grow many plantain varieties on our property and are always looking for new ways to incorporate them.  Well, today, I created one: The Resistant Starch Smoothie. Raw, green plantains contain resistant starch, which is  a super nutrient.  Resistant starch is any starch that is not digested in the small intestine but passes to the large bowel. Resistant starch helps fight disease and positively influences many processes such as:

  • the functioning of the digestive tract,
  • increasing microbial flora,
  • improving blood cholesterol level,
  • preventing Type 2 diabetes,
  • preventing insulin resistance,
  • improving whole body insulin sensitivity,
  • controlling diabetes,
  • increasing satiety,
  • reducing fat storage,
  • preventing coronary heart, and
  • aiding in weight loss.

 

However, the only drawback is that it needs to be eaten raw (not so tasty…for kids, at least….. For me, I don’t mind). I can munch on a raw plantain with no probs. The ninos, however, put up more of a fuss. Therefore,  this smoothie takes care of all of that. They drink it like it is liquid gold!  Here is what you’ll need:

 

Ingredients:

  • 1 green plantain
  • 1 cup of  milk
  • 1 overripe banana (we keep our overripe bananas in the freezer)
  • A blender full of Spinach

 

Directions:

Slice the ends off the plantain and cut vertically in half.

Work your thumb under the skin to remove the meat.

Chop the plantain and banana into chunks.

Place everything in the blender (may need to add ice if not using frozen bananas) and blend.

Pour into serving cups.

Recipe Card

Ingredients:

  • 1 green plantain
  • 1 cup of  milk
  • 1 overripe banana (we keep our overripe bananas in the freezer)

  3. Chop the plantain and banana into chunks.
  4. Place everything in the blender and blend.
  5. Pour into serving cups. (may need to add ice if not using frozen bananas).
