NO SUGAR, NO FLOUR, NO EGGS, NO BAKING, 5 MINUTES!
What better way to enjoy a cookie, than to not have to heat up the whole house to bake it! Plus, you get the added security of knowing these paleo cookies have no preservatives, additives, or unnatural ingredients, and they are so simple that the young kiddos can help you make them and enjoy them!
We just whipped up a batch in about 5 minutes for a good friend who is coming to do a photo shoot with me for my website ;). THANK YOU GENNA and Tamarindo Family Photos!
Total time (start to finish): 5-10 min
Ingredients:
- 1/3 cup honey (or less) could also try Stevia substitute
- 2 Tbsp. cocoa
- 1/3 cup coconut oil or ¾ stick of butter
- 1/3 cup almond butter (we used slivered almonds and grind them up in the food processor)
- 1 tsp. vanilla
- 2 cups dried, unsweetened coconut flakes
Directions:
Boil the honey, cocoa, and coconut oil (or butter) in a medium saucepan for one minute.
Remove from heat and stir in the almond butter and vanilla
Add the coconut.
Spoon onto a dish/pan/plate/parchment paper/wax paper/ nonstick baking sheet/etc…
Put in fridge until hard and cool.
We keep ours in the freezer and eat them directly out of the freezer! They are amazing. They will keep quite a long time in the freezer. Not that we let them, but there was a time when we forgot they were in there, and after 5 months, they were still heaven!
