Paleo Vanilla Cupcakes with Creamy Chocolate Frosting

This is always my easy cupcake go-to.  Today we celebrated my youngest son’s 4th birthday and at his request we made vanilla cupcakes with creamy chocolate frosting. There is only one bowl to clean and it’s quick and easy. I prepare the complete batter in the food processor and bake them in the toaster oven!

 

As you can see, my 4-yr-old requested a Mickey Mouse theme.

Paleo Vanilla Cupcakes with Creamy Chocolate Frosting

Serves: 12-15 cupcakes

Ingredients

 

Instructions

1. Put all the dry ingredients into a food processor (or mixing bowl if you do not have this luxury)

2. Pulse in eggs, oil, honey and vanilla (or mix in if not using a food processor)

3. Pour batter into 12 cupcake holders and bake at 350° for 20-24 minutes

4. Let cool and frost with creamy chocolate Frosting!

 

 

Paleo Creamy Chocolate Frosting 

Ingredients 

 

 

Instructions

1. In a glass bowl, microwave chocolate, coconut oil, and vanilla for a couple minutes, stir until everything is mixed well.

2. Place in the fridge to cool until thicken and not warm, approximately 15-30 minutes

 

 

3. Remove from refrigerator and whip frosting with a hand or stick blender until thick and fluffy (if it does not blend to thick and fluffy, put back in fridge to cool more and then try again) Believe me, it will get thick, creamy, and fluffy.

 

 

4. Frost over Paleo Vanilla Cupcakes

5. Serve!
