Two ingredients, sweet and simple.
Need I say more? This morning, looking for a quick and easy breakfast for my boys I ran across some salami and cheese in the fridge. We always keep the farmer’s cheese in the fridge for snacks. My boys’ favorite is to thinly slice it and fry (with no oil) in a non-stick skillet until crispy. Here’s what you’ll need to do:
Ingredients:
- ½ package of salami (any precooked meat will do: pepperoni, ground beef, chicken, etc…). There is only one brand of salami in Costa Rica that I’ve found doesn’t have fillers like: wheat, corn, sugar, and soy and that is what you see used below. However, if you are located in a place that offers more healthy varieties go for whatever kinds you enjoy most.
- Cheese (sliced thin and enough to coat the bottom of your skillet)
- Italian seasoning (to sprinkle on top)
*optional: any veggie choices you’d like to add or have in the fridge
Directions:
In a nonstick skillet, place sliced cheese to cover the bottom. Then layer when meat and sprinkle with Italian seasoning (salt/pepper to taste if desired). *okay, here is where you could also layer with veggies (spinach, onion, peppers, olives, tomatoes, etc…) Cover and heat over med-high flame.
Cook covered until the cheese is brown on bottom.
Let sit for a few minutes to cool and settle. (You should be able to lift easy with a spatula).
We, then, transferred ours to a pizza pan to cut and serve. It transports very well, so you could transfer it to any thing you’d like.
Slice and enjoy!
Now, my boys have easy (do-it-yourself-grab-out-of-fridge) breakfast for the week!! Yes, this recipe just made my life easier! Hopefully it does the same for yours!
*you can also dip this in homemade ketchup (as a pizza sauce).
