Grain free, egg free, healthy stove-top pizza!
In continuation of my healthy pizza series which features low carb doughy crust and breadsticks, yuca doughy crust and breadsticks, 2 ingredient 5 minutes stovetop pizza recipe, and quick and simple egg pizza, I decided to try the stove-top cheese crust paleo spinach pizza (because we have an abundance of Sissoo spinach right now) to see if it would affect the kids’ taste buds (for I knew it would have no impact on any one else!!) Well, the kids didn’t even seem to notice it was there! I think they see a pizza shape and go crazy. However, I’d seem to think it is more of the roasted cheese flavor that pan-frying the cheese gives to the curst. Anyhow, they ate it up with no remorse. My six-year-old even told me it was the best thing he has ever eaten, which he has been telling me lately (so that is a good thing!). In case you missed my last post on the five minute pizza, here is what you’ll need to do:
Ingredients:
- Cheese (sliced and enough to coat the bottom of your skillet)
- ½ package of salami (any precooked meat will do: pepperoni, ground beef, chicken, etc…)
- Spinach (I used our Sisso spinach)
- Italian seasoning
Directions:
Add your sliced cheese to the bottom of a non-stick skillet.
Then layer with ingredients. (even though you see me using the spinach first, I recommend starting with meat if you’re using it so that it fuses into the cheese well. Then layer with the greens). Finally, sprinkle with Italian seasoning (and salt/pepper if you desire)
Cover and cook on med-high heat until the cheese is brown and crispy on the bottom.
Turn off the heat and let it sit for about 10 minutes or until it is set. (You will know because you can easily lift it with a spatula and transfer it to pizza pan or plate).
Slice with a pizza slicer and enjoy!

5 Minute Spinach Pizza
Ingredients:
