Ultra-Low Carb Spinach Pizza

Almost ZERO carbs but 100 percent goodness!

A good friend in Costa Rica recently  shared with us her mother’s recipe for a spinach pizza that she used to prepare for her family in Nicaragua.  After trying it and loving it, we decided to make a similar version of it ourselves!  I didn’t know how my boys would react to a spinach pizza, but thankfully they thought it was “awesome”!   Personally, I think all I have to say is “pizza” somewhere in the name and they would instantly get excited.  They didn’t even care when I pulled out the “green” pizza from the oven.   In fact, they were so anxious to try it, that they even helped me cut it and serve it (and that is my 6-yr-old son going back for seconds!).

 

Crust Ingredients:

  • 1 bag of fresh Spinach
  • 8 eggs
  •  (All blended together with 4 tbsp. of water, salt , pepper, garlic, and Italian seasoning)

 

Toppings (this is what we used, but you can use your favorites):

  • Shredded Cheese
  • Chopped olives
  • Tomatoes
  • Onion
  • Pepperoni

 

Directions:

  1. Preheat oven to 425.
  2. Blend (with immersion blender) the crust ingredients and put half the mixture in the bottom of a pizza pan (ours was non-stick and did just fine; however, you may also add a bit of coconut oil or olive oil to coat your pan).
  3. Layer with pizza toppings (put cheese on last).
  4. Pour the remaining spinach/egg mixture on top.
  5. Bake for 15 minutes.
  6. Slice and serve!

 

 

 

My boys loved it so much, they even put it in their own containers to have for lunch the next day!
