Amazing LOW CARB Pizza (and Breadsticks) using Carrots?!

Magic happens when you are able to turn a vegetable into pizza dough.

Now, I admit, we were just being crazy, but I wanted to see if it would work. All I had in the fridge were giant carrots and the boys wanted some pizza, so we made magic happen.  I ended up following my normal yucca pizza crust recipe – just subbing the carrots for the yucca. In the end, we were left with one of the yummiest low carb pizzas ever.

Ingredients:

 

 

Directions:

Using a food processor and a small child,  shred the carrots. (you could also use a food grater if you want a workout). The more pulpy the carrot, the better.

 

Next, if your cheese is not shredded, shred it next in the processor.

Dump everything into a large bowl (carrots, sour cream, cheese, eggs, and spices) and mix. Line some pizza pans with parchment paper and smash (with your hands, spatula, or wooden spoon) the carrot mixture into place.

 

 

 

Your mixture will be loose and should look like this:

 

 

 

 

Bake at 400 degress until the top looks brown and crispy (maybe 10 min).

Take out and flip over onto another parchment paper and slowly pull the top paper off.

Put back in the oven till top is brown. Then you can decorate it pizza style or for breadsticks (more cheese and garlic) and put it back in the oven until the cheese is melted.

Now you are ready to enjoy the best low carb carrot pizza and low carb breadsticks in your life!

  • 3 eggs
  • (garlic, Italian seasoning, salt, pepper to taste)

  5. Bake at 400 degress until the top looks brown and crispy.
  6. Take out and flip over onto another parchment paper. Put back in the oven till top is brown.
  7. Now here you can cut up and enjoy your breadsticks. Or, pizza decorate it and put it back in the oven until the cheese it melted.
