2 Steps, 2 Ingredients Paleo Egg Muffins (a great paleo snack)

DSC_0350Quick and Easy Breakfast on the Go and a Great Paleo Snack!

You may have noticed a trend with me: I LOVE quick and easy! Here is another one of our household’s go-to recipes that is simple and tastes amazing. We also make this paleo snack in bulk in order to be able to eat them for breakfasts (sometimes lunches and/or dinners if we are in a hurry), snacks, or simple ready-to-go hungry satisfiers.  The convenient size of a muffin, these are the perfect, portable size to take with you anywhere, too. You can just pop in the microwave, toaster oven, or eat cold right out of the fridge :).

Ingredients (makes 24 muffins):

  • 12 eggs
  • Salt, pepper, garlic (to your liking)

Tomato (optional)

Cheese (optional)

Meat: bacon, sausage, ground beef, etc… (optional)

 

Instructions:

1. Preheat oven (we used our toaster oven) to 350 degrees. Combine everything together in a bowl and whisk. (I use a stick blender ….um….because it’s faster and easier!)

2. Lightly grease muffin pan (with oil, butter, whatever you have). We used a coconut oil spray.

Then, pour the eggs evenly into each.

You can then top with anything you’d like. My little boys love tomatoes and cheese, so we use that often, but you could also sauté veggies as well (onion, peppers) and/or add greens like, spinaches, broccoli, left over veggies in the fridge.  We have done all of this and it has turn out fabulous each time.

Bake until golden brown on top (about  12-15 minutes).

My boys also love dipping these in our homemade, sugar-free  ketchup!

These  will keep for up to a week in the fridge or months in the freezer as well!  Enjoy!
